That's set by Payvision. I'm not sure how to find out the value without
contacting them.

We use Gravity Payments (which shows up to us as Network Merchants Inc (NMI).
I can't find any contact info on their website.
Their support page redirects me to a CheddarGetter page.
Do you know how we contact them?

You're correct, but the billing descriptor is set by the acquirer. For USD, that's Gravity Payments. For GBP and AUD, that's Payvision.
