Hi Miles,
Yes. By default, CheddarGetter retries a declined payment every couple of days. After a few attempts, the customer's subscription is auto-cancelled.
If you have enabled our email notifications, you can try to avoid this by reminding them their payment is due, or sending automated notifications when their payment method is expiring.

Now, what if a customer cancels their subscription in the middle of the period? Does the cancellation hook send immediately, or when their next invoice is due? (which they obviously won't pay because they cancelled)

Cancellation hooks are sent immediately upon cancellation regardless of the reason.
